Produced organically with whole bunch pressing, spontaneous fermentation and malolactic fermentation, and matured for 7 10 months on the lees in steel tanks and foudres. The result is a mineral filled, nervous and refreshing white wine with the terroir's slate and lime structure clear in the glass. This is an allocated wine
